Rice with Vienna Sausages Recipe- Quick, Simple & Budget Friendly
If your life is anything like mine, you often find yourself with very little time to plan dinner, let alone cook it. Or worse, you had dinner all planned out, yet completely forgot to pull out the meat from the freezer in the morning. Gasp!
When this happens, it is easy to resort to less than ideal solutions: get take out. Or just a cold, plain bowl of cereal. While a bowl of cereal is perfectly acceptable, there’s nothing like a nice, warm meal at the end of a long, trying day. And I’d much rather have a home cooked meal.
It is with those days in mind that I am sharing a very simple recipe that my family loves. Because I, too, have some very busy days, when one child might have a concert. Or another might have some other kind of school activity. And nothing drives my husband and I crazier than having to cook a complicated meal after 6 pm. UGH
While I could probably cook this without actually following a proper recipe, I always prefer to follow it. Since I am not a fan of cooking, or particularly talented in the kitchen, I need all the guidance I can get to make sure that it turns out great 🙂
The original recipe can be found at Sazón Boricua. However, it is in Spanish so I figured I’d just translate for those non-Spanish speakers out there who wish to give it a try. If you’re not a big fan of any sort of canned food, then this might not be for you. I use very little canned products myself. However, I make sure I keep some things handy for when I need them. After all, a bit of homemade canned food is much more enticing than take out, in my opinion.
And most noteworthy, this recipe is budget friendly! It definitely sounds like a winner to me.
Without further ado, here is the Rice and Vienna sausages recipe

**Serves 4-6**
Ingredients:

- 2 1/2 cups of water
- 3 cups of long grain rice
or medium grain rice. I use long grain, which I buy in bulk (see picture above)
- 2 cans of Vienna Sausages
- 2 tbsp of sofrito or *recaito (I make my own. Find the recipe here)
- 2 tbsp of vegetable oil
- 2 cilantro leaves (I use this)
- 1 chicken bouillon
1/4 tomato sauce, Spanish style. Find it here
. However, I use a 1/3 of a can of tomato paste instead. Find it here.
- 1 tsp of salt (or to taste)
- 1 tsp of fresh or ground oregano (I use oregano leaves)
- 2 tbsp of pitted olives (I don’t use them but they are included in the original recipe. Not using them does not affect the final product; however, if you wish to add them you can find them here)
- 1 tsp of cilantro & annatto based seasoning
** In my country, we call the green one Sofrito, which is called Recaito in other countries. Both versions are amazing products, and the color is simply the result of the main/base ingredient.
Instructions:

- First of all, pour the vegetable oil in a cooking pan and saute the sofrito and the cilantro for 1-2 minutes, until it turns translucent.
- Add the oregano, chicken bouillon, olives, Vienna sausages (cut into small pieces), and the tomato paste (or Spanish style sauce) and saute for an additional 1-3 minutes.
- Next, add the rice and mix in well with the other ingredients and then pour the water in, making sure it covers over an inch of the top of the mixture. It should look like it does in the picture above (Please, excuse the crappy pan. I am sort of set on my ways, and have been using that old thing for ages 😉 )
- Let it boil on medium until the water starts to evaporate.
- Lower the burner to low, stir the rice from the edge of the pan, and pile it in the center of the pan.
- Cover completely with the lid and let it cook without stirring for 20 minutes.
- When is done, turn off the burner and loosen it up using a fork.
- Finally, serve with beans, a salad or anything else on the side. However, this is entirely optional, since it tastes amazing by itself. For my family, I typically serve it with fried plantains, which we all love!
